This is Cheryl’s Health Corner for the end of April. I am your friendly neighborhood health coach. I truly want to be a part of the health of my community.
Cauliflower is one of the most versatile vegetables. And its great for your body, your liver. cancer prevention, and as an antioxidant.
You can eat it raw and dip it in hummus or almond sour cream ranch or onion dip.
You can cut it up into florets and toss it in organic butter or ghee, season it and roast it. It will brown and caramelize in about 20 minutes.
Steam it, throw it into your blender with bone broth or veggie broth, nut milk and seasoning and make soup.
You can steam it and mash it either by hand or in your blender and make mashed cauliflower instead of mashed potatoes. I add almond chive cream cheese to it.
You can make a variety of cauliflower rice recipes with it.
I add Greek black olives to my Greek version.
It will take on any flavors. I have a fried rice recipe that I want to try using cauliflower, so that’s next.
You can even make hummus with it.
When you cook and get confident, you will never be bored eating healthy food. You just must get into the kitchen and allow your imagination to run wild.
