This newsletter is to introduce you to products, restaurants, and places to buy healthy food. Since I eat around 18 food sensitivities, and my husband swears I am a toxic alarm for any toxin in a 50-mile radius, finding places and products that I can use deserves a big call-out for everyone. These are clean, clean, clean or I couldn’t use them. They are so worthy of your attention and will get you one step closer to removing items that contribute to your toxic load.

Cappello makes some pretty amazing products for people who don’t eat gluten.
The first things I found and fell in love with are their almond flour fetticini and lasagna noodles. I was purchasing them directly from the company in Colorado, but Whole foods now has them in their frozen foods section. (I helped campaign for Whole Foods to carry them). My hubby and I love both shapes. They cook quickly and make Italian nights fun again, around my sensitivities.
We just made lasagna using Cappello’s lasagna noodles and Kite Hill almond ricotta, and 2 layers of thin zucchini noodles in between. I also added spinach for extra goodness and nutrients. I use Raos marinara. Yummy and clean.
Cappello pasta is available at Whole Foods and many other healthy grocers. My local health food store carries their pasta.
They also now have a gluten free pizza crust that you can buy directly from the company in Colorado. I live in hope that eventually these will also be at Whole Foods or some place local. They have traditional pizzas and just crusts. They are all gluten free. Since I am very dairy sensitive, I buy the naked. We have pizza nights probably once a month, and these crusts are yummy. Try them- you won’t be disappointed. It was a thrill to be able to have pizza again. Well worth your purchase and the shipping. Last pizza night was this crust with small scoops of butternut squash, carmelized onions, sautéed mushrooms and sautéed spinach. My hubby got dairy cheese, I use little scoops of Kite Hill almond ricotta. Double Yum.
I bought a steel pizza plate to cook these on in my oven. We heat it at 450 for 45 minutes before we slide the pizza on. The crust gets crunchy and the result is amazing.
