Legacy Recipes in honor of my family traditions growing up

This post is to share information with viewers on Sunday’s 360  TV show on Family Legacies and the food and warm memories that I grew up with, my generational legacy.

I had a remarkable family and had amazing love from both of my parents to maintaining those warm traditions and beautiful foods are important tto me.  My Mother was an excellent cook, and made almost everything from scratch that we ate as a family.  I was also blessed with a family that sat around  the table and shared family stories and memories, sometimes repeatedly.

 

We loved to josh each other.

 

The ingredients that my Mother used in cooking may have been healthier back then or not, but I can not make them in the same traditional way that my Mother did.  I got Fibromyalgia 12 years ago, have completely changed how I ate, and  now only use real whole food ingredients in the foods that I cook, and like my Mother, I make most every thing from scratch.

 

I have reversed my autoimmune disease, and I FEEL GREAT, so I am not giving that  up, but I also refuse to not eat family favorites and  remember my amazing family and all of our family traditions and stories.

 

So I created a Use This Not That chart that I use to convert any recipe to a healthier version that is still super delicious, but only uses real food ingredients and omega  3 fats that maintain my health and Feeling Great.

 

Where there is a will there is a way.  Always, and maintaining my health is non-negotiable.  So, my hubby and I have figured out how to make family favorites and still maintain our health.

And I am including 3 copy cat girl scout recipes that I got from Food Babe.

 

I am showing you just how icky the original ingredients were and then the copy cat recipe so that you can make them in a way that supports your future health.

 

And then this is my updated version of my Mothers Strawberry Parfait pie.

 

I am making a strawberry parfait pie today for company. It was something that brings my memories of my sweet Mom close to my heart. She always used Jello, and I have since learned how disgusting the ingredients in jello actually are and I wouldn’t think of putting them into my body, so I last year I created my own Paleo version starting with grass fed grass finished gelatin and then adding organic strawberries (some frozen, some fresh) coconut cream, monk fruit for sweetner and the local bakery here bakes with flour that is local where they do not spray with glyphosate. Its not certified organic, but there is nothing in it that will hurt our body and her pie crusts are delicious. So I bought another this year. My grandchildren loved this last year, so I will make another for them, when they arrive on Dec 27.
This year, I actually found a recipe to make this pie so I am going to follow it. Mine last year tasted great, but was a little too jelled.
If you want to try this for a desert, this is the recipe I will use this year.
My only change is that I will take some frozen organic strawberries and give them a whirl in my Vitamix, and start from there. I will heat them up like this cook suggests, and once poured in the shell I will add some fresh berries on top.
She uses honey, which is a good choice and the recipe doesn’t call for a lot so it won’t be terribly sweet, and that’s perfect.
I will also add some coconut milk for creamy ness, and before I serve this, I will whip a can of coconut cream with a touch of organic vanilla and a little bit of monk fruit and viola!
My trick last year was to put the gelatin in the water and microwave it until all the lumps come out and then to add it to the hot strawberries. It was easy and the extra step was fail-proof. You only need to put it into the microwave for a few seconds, maybe 15, keep taking it out and whisking it until all the lumps are gone and then add it in to the strawberry mixture.
Then I add the coconut milk and then put the real berries on top and then into the fridge it goes.
The pie crust needs to be baked before the filling goes in.
So easy, and for me, it will bring my Mom, who was a cutie, right to our table to enjoy the festivities today. Sigh.  I miss her terribly but we will celebrate her by eating a favorite of  hers and our family.
Filling:
4 cups halved strawberries
2 teaspoons lemon juice
2 tablespoons raw, local honey (or more, to taste)
1/2 cup cold water
2–3 tablespoons grass fed gelatin
My parents are always close to my heart and this, for me, invites them to join us and be there. I have shared that I am so grateful that I choose my parents so well before I was born. *smile* I had two kind and loving parents. They loved me unconditionally, and encouraged me to be whatever I wanted to be. And yep, when I would say that my Mom would quip back that I must have been hatched because no daughter of hers would say such a silly thing.
I think they are smiling down on me because they would have loved John. My life is good.
Take your favorite recipes and find a way to clean up the ingredients. You won’t be deprived but be very discerning about what you put into your body. Food Quality Matters. Only eat food that loves you back. Eat for your health always.
